Electric combi oven „Inoxtrend“ ProEvo Plus PPDA 111E with manual controls (11 × GN 1/1)

A combi oven for 11 GN 1/1 trays

The „Inoxtrend“ PPDA 111E is an electric combi oven from the ProEvo Plus range. It takes 11 GN 1/1 trays, is operated with knobs and generates steam by injecting water straight into the chamber.

The oven has three modes — convection, steam and combi (convection with steam) — and the humidity in the chamber can be adjusted. This is the manual (knob-controlled) version: it has no programmes, core probe or automatic cleaning.

The chamber has eleven levels for GN 1/1 trays (530 × 325 mm) with 67 mm spacing. Trays go in lengthwise (LW), with the short side facing the door. The seamless chamber and removable tray runners make cleaning easy.

Controls and door

The knobs set the cooking mode, chamber temperature (50–270 °C) and timer (up to 120 minutes or continuous). When the set time is up, a buzzer sounds and all functions stop.

The fan runs at one speed and reverses automatically. The steam release valve is opened and closed with a knob.

The patented ergonomic double-grip handle lets you open the door even with your hands full. An LED strip in the door lights the chamber.

The standard door is hinged on the left. If your kitchen layout needs the door to open the other way, specify the right-hinged PC 111C door when ordering.

Seamless chamber and removable tray runners

The seamless chamber has no joints or crevices where grease and food residue can build up, so it is easy to keep clean and hygienic.

The tray runners are made of heavy-gauge stainless steel: sturdy, hard-wearing and able to carry fully loaded trays day after day.

The runners unhook easily from the chamber walls and can be washed separately. With them out, the whole chamber is within easy reach — including the walls they normally cover — so no grime is left hidden.

This design pays off in kitchens where the oven is in use every day and hygiene standards are strict — restaurants, schools, kindergartens and care homes.

What’s new in the ProEvo Plus range

From 1 January 2027 the ProEvo Plus PPDA ovens succeed the „Inoxtrend“ Professional CDA ovens in the manufacturer’s range. According to the manufacturer, the ProEvo Plus and ProEvo ranges bring:

  • redesigned control knobs that are easier to use and more precise;
  • a patented double-grip handle and LED lighting in the door;
  • a base structure made entirely of stainless steel;
  • better insulation of the technical compartment and a power board designed for greater reliability and efficiency;
  • the electrical system housed in an enclosure for easier maintenance;
  • an optional kit for stacking the electric models (ask us which models can be combined).

Worth knowing before you choose

  • The oven has no core probe, automatic programmes, USB port or automatic cleaning. If you need them, choose the PPDT 111E: same capacity and power, with all of these plus a 5″ touch screen, a two-speed fan and an automatic steam release valve.
  • Steam is produced by water injection; there is no steam generator.
  • This is an electric oven: it needs a 380–415 V three-phase and neutral supply and is rated at 16.4 kW. A gas version, the PPDA 111G, is also available — ask us about it.
  • This oven does not take GN 2/1 trays: for those, choose the PPDA 207E (7 × GN 2/1) or PPDA 211E (11 × GN 2/1). For more GN 1/1 trays, the PPDA 120E takes 20 — ask us about these models. The smaller seven-tray model is the PPDA 107E (800 × 750 × 800 mm, 8.3 kW).
  • Water hardness must be 4–12 °fH (French degrees); for harder water the manufacturer advises fitting a softener upstream. Polyphosphate dosing systems must not be used, and if a water treatment system takes the water outside the required values (see Installation requirements), the warranty is void.

ProEvo Plus and ProEvo ovens compared

All three ovens are electric, generate steam by injecting water straight into the chamber and take trays lengthwise at 67 mm spacing. The main differences:

Installation requirements

  • Electricity: 380–415 V 3N~, 50 Hz, 16.4 kW (heating elements 16.0 kW, fan motor 370 W), current draw 25 A, supply cable 5 × 6 mm². The oven must also be connected to the equipotential bonding system (screw at the back). A version for a 230 V three-phase supply is available at extra cost.
  • Water: cold drinking water (15–20 °C) at 1.5–2.5 bar; hardness 4–12 °fH, conductivity 50–2,000 µS/cm, chlorides below 150 mg/l, chlorine (Cl₂) below 0.2 mg/l, pH above 7. The water inlet is at the back; always fit an easily accessible isolating valve between the oven and the mains, and the manufacturer also suggests a cartridge filter. Connect with rigid pipes, not hoses.
  • Drain: the outlet is at the back. The drain must have no trap, use rigid pipes rated for 110 °C, be no narrower than the outlet, fall by at least 2° and discharge at atmospheric pressure through a funnel-type air break (tundish). KSC 40 and KSC 50 vented water discharge kits (for 40 and 50 mm pipes) are ordered separately.
  • Size and siting: 800 × 750 × 1,060 mm (W × D × H), packed weight 140 kg. Place the oven on a stand or table; the „Inoxtrend“ ST LU11A stand with tray runners is ordered separately. Room temperature must be 5–35 °C and relative humidity no higher than 70 %. Leave at least 50 cm on the right for installation and servicing, at least 1 cm on the left, and enough space at the back for the equipotential screw label to stay visible and the screw within reach.
  • Steam extraction: a KL2_LU1 extraction hood or a KL3_LU1 condensation hood can be ordered separately; both run on a 230 V single-phase supply and are rated at 0.40 kW each.

Included items and accessories

The oven comes with one grid.

Available separately: the ST LU11A stand with tray runners, the DLE hand shower, the FT 111C grease filter, the KL2_LU1 and KL3_LU1 hoods, KSC water discharge kits, GN trays and grids.
