Vegetable preparation machine, up to 850 kg/h
The „Sammic“ CA-42 is a high-output vegetable preparation machine from the Active range, with a two-speed 750 W motor and a large-capacity hopper. It processes 200 to 850 kg of vegetables an hour, and „Sammic“ recommends it for kitchens serving 100 to 600 covers.
With interchangeable discs and grids it slices, cuts strips and batons, dices and shreds vegetables, and grates cheese or bread. According to „Sammic“, the discs and grids can be combined to give more than 70 different cuts and grating sizes. Discs and grids are not included, so you can choose the ones your menu needs.
The disc turns at 365 or 730 rpm, and „Sammic“ highlights the two speeds for precision and control.
Large-capacity hopper and high ejector disc
The feed opening is 286 cm², so the large-capacity hopper takes bulky vegetables, even whole cabbages. Lift the pusher lever, swing it aside and rest it on its support: the hopper stays open and the motor stops. Once the produce is in, swing the lever back — the motor starts — and gently lower the lever to press the produce against the disc. There is no need to press hard: too much force can damage the produce and strain the motor.
For cabbage and similar vegetables, screw the core drill onto the shaft; with it, whole cabbages can be cut. For all other produce, fit the stirrer instead.
The machine has a high ejector disc, so it can process more produce. The manual recommends the high ejector disc for bulky produce such as cabbage, cauliflower and celery, and for grating cheese or carrots; for all other cuts, use the normal ejector disc.
For long vegetables such as carrots, cucumbers and chicory, there is a Ø 55 mm feed tube with a pusher next to the hopper. Cut produce leaves the machine at the side, so the machine takes up less worktop space, and the produce is guided straight into a container under the outlet without splashing.
More than 70 cuts
The machine takes 205 mm „Sammic“ discs and grids:
- FC — 1–25 mm slices (FC-1 and FC-2 also slice potatoes for crisps);
- FCO (2, 3 and 6 mm) — rippled slices;
- FCC (2, 3 and 5 mm) — curved-blade discs for soft produce such as tomatoes, oranges, lemons, bananas and apples;
- FCE (2, 4 and 8 mm) — strips and batons of potato, carrot, celery, beetroot and the like;
- SH (2, 3, 4, 6 and 7 mm) — shredding and grating vegetables, cheese, bread, walnuts and almonds;
- SHF (fine) and SHG (coarse) grating discs — bread, hard cheese and chocolate;
- FFC grids (8 and 10 mm) with an FC disc — chips;
- FMC grids (8, 10, 14, 20 and 25 mm) with an FC disc — dice;
- Déli-cut kit — 4 × 4 × 8 mm pieces for sautéing, salads and fillings;
- Déli-cut PLUS kit — 5 × 5 × 5 and 5 × 5 × 6 mm dice of produce with a high water content, such as onions.
Discs and grids are sold separately; the QC-U universal grid cleaner is supplied with the machine.
Controls and safety
The electronic control panel has speed 1 (slow) and speed 2 (fast) buttons, a PULSE button and a stop button. A power indicator light shows that the machine is on, and an indicator light for each speed shows the selected speed and the status of the safety devices. The panel is rated IP55 and the rest of the machine IP23.
The machine runs only with the hinged lid closed and the pusher lever down. Never put your hand or any utensil into the hopper, the feed tube or the outlet. Lifting the lever stops the motor; if you lower the lever again within 30 seconds, the motor restarts automatically; after 30 seconds, you have to press the button for the selected speed again. Opening the lid stops the motor, and once the lid is closed the machine has to be started again. Do not leave the machine running unattended. If the lever stays down for 30 minutes, the machine switches off automatically.
The motor has a thermal cut-out. When it trips, the power light and the indicator light for the selected speed flash alternately. Wait for the cut-out to reset, then look for the cause, such as overloading or a seized part.
Cleaning and care
Unplug the machine before cleaning. The blades of the discs and grids are very sharp, so handle them with care. Clean all food-contact parts straight after use with hot water and a food-safe detergent, rinse well with hot water and disinfect with a cloth moistened with 90 % ethyl alcohol.
Release the lid catch and open the hinged lid. Holding the disc without touching the blades, unscrew the core drill or stirrer anticlockwise with the key supplied. Then take out the disc (turn it clockwise and lift it out carefully), the grid and the ejector disc.
Do not put the discs, grids, lid or pusher lever in a dishwasher. Do not hose down the outside of the machine; wipe it with a damp cloth and an ordinary detergent. Do not use harsh chemicals (strong acids, neat bleach) or steel scourers or scrapers, as they can cause rust.
To clear produce stuck in a grid, push it through in the cutting direction with a long potato or a whole carrot; never knock the grid with hard objects. The plate of the SH grating discs comes away from the frame for easier cleaning. The disc blades can be removed for sharpening; always use a soft stone so the cutting angle stays unchanged.
Installation and connection
Stand the machine on a stable worktop 600–800 mm high that will not resonate, and place a container under the outlet. The machine is not fixed down, so it is easy to move. It measures 391 × 396 × 652 mm (W × D × H) and weighs 24 kg.
The CA-42 has a 750 W motor and needs a three-phase 400 V, 50 Hz supply; there is no single-phase version. Connect it to an easily accessible wall socket on a circuit with a main isolating switch, a residual current device (RCD) and a 4-pole 10 A circuit breaker.
Earthing is mandatory. The disc must turn anticlockwise, or it will not cut; if it turns the wrong way, an electrician must swap two phases in the power cable. The power cable is 1.5 m long; a damaged cable may only be replaced by a „Sammic“ authorised service centre.
