A programmable combi oven for 11 GN 1/1 trays
The „Inoxtrend“ PPDT 111E is an electric combi oven from the ProEvo Plus range. It takes 11 GN 1/1 trays, is operated from a 5″ capacitive touch screen and generates steam by injecting water straight into the chamber.
The oven has three modes — convection, steam and combi (convection with steam) — and the humidity in the chamber can be adjusted. A core probe, automatic programmes and automatic cleaning with detergent tablets come as standard. The on-screen menu can be set to Lithuanian.
The chamber has eleven levels for GN 1/1 trays (530 × 325 mm) with 67 mm spacing. Trays go in lengthwise (LW), with the short side facing the door. The seamless chamber and removable tray runners make cleaning easy.
Modes, core probe and timer
In convection mode the chamber reaches up to 270 °C, in combi mode up to 240 °C (humidity adjustable from 0 to 100 %), and in steam mode it runs at 30–130 °C. The fan has two speeds and reverses automatically. Ventilation can also be set to semi-static: the fan stops whenever the chamber reaches the set temperature, and convection and combi modes are then limited to 200 °C.
The single-point core probe can be set to a core temperature of 20–100 °C. Delta T cooking works only with the probe: throughout the cooking time the oven keeps a constant difference between the chamber temperature and the core temperature of the food; you can set this difference between 1 and 150 °C (up to 100 °C in steam mode).
Automatic preheating is available (by default to 20 °C above the set temperature), and a cooling function brings the chamber temperature down when the next dish cooks at a much lower temperature. The start can be delayed by up to 23 h 59 min. The steam release valve is controlled from the touch screen: it can be opened or closed in convection and combi modes and always stays closed in steam mode. Cooking time can be set from 1 minute to 99 h 59 min, or the oven can be left to run without a time limit.
Several dishes at once
The Multi Level function lets you cook different dishes at the same time: each level gets its own time or core temperature, and the oven tells you when to take each tray out. Multi Level cannot be combined with multi-step cooking.
Recipes and data
The oven’s memory holds a recipe book with many international recipes tested by the manufacturer’s chefs, grouped by type of dish, such as pasta and rice, meat, chicken, fish, vegetables, eggs and pastry. The manufacturer’s recipe book cannot be changed: an edited recipe is saved among the user recipes.
You can create and save your own recipes with up to 20 steps each. Through the USB port, user recipes can be exported and imported, for example to copy them to another oven. The oven also logs HACCP data.
Door and lighting
The patented ergonomic double-grip handle lets you open the door even with your hands full. An LED strip in the door lights the chamber.
The standard door is hinged on the left. If your kitchen layout needs the door to open the other way, specify the right-hinged PC 111C door when ordering.
Automatic cleaning
The oven cleans the chamber automatically with detergent tablets; each tablet goes into a round holder at the bottom of the control panel. There are five programmes:
- short wash — for daily cleaning or light soiling, 1 tablet;
- medium wash — for less frequent cleaning with average soiling, 2 tablets;
- long wash — for infrequent cleaning, 3 tablets; with heavy soiling the cycle may need repeating;
- rinse — without detergent, removes light food residues left after cooking;
- manual wash — for when you run out of „Inoxtrend“ detergent or the automatic programmes malfunction: you spray detergent into the chamber yourself before starting.
A wash cannot be stopped once it has started. The manufacturer recommends rinse aid tablets only where water hardness is above 10 °fH; they go in the same holder.
„Detabinox“ detergent tablets by „Inoxtrend“ (pack of 100) are sold separately.
Seamless chamber and removable tray runners
The seamless chamber has no joints or crevices where grease and food residue can build up, so it is easy to keep clean and hygienic.
The tray runners are made of heavy-gauge stainless steel: sturdy, hard-wearing and able to carry fully loaded trays day after day.
The runners unhook easily from the chamber walls and can be washed separately. With them out, automatic cleaning reaches every surface of the chamber — including the walls they normally cover — with no hand scrubbing needed.
This design pays off in kitchens where the oven is in use every day and hygiene standards are strict — restaurants, schools, kindergartens and care homes.
What’s new in the ProEvo Plus range
From 1 January 2027 the ProEvo Plus PPDT ovens succeed the „Inoxtrend“ Professional CDT ovens in the manufacturer’s range. According to the manufacturer, the ProEvo Plus and ProEvo ranges bring:
- a 5″ capacitive touch screen and the Multi Level function;
- a patented double-grip handle and LED lighting in the door;
- a base structure made entirely of stainless steel;
- better insulation of the technical compartment and a power board designed for greater reliability and efficiency;
- the electrical system housed in an enclosure for easier maintenance;
- an optional kit for stacking the electric models (ask us which models can be combined).
Worth knowing before you choose
- Steam is produced by water injection; there is no steam generator.
- This is an electric oven: it needs a 380–415 V three-phase and neutral supply and is rated at 16.4 kW. A gas version, the PPDT 111G, is also available — ask us about it.
- A simpler model of the same size and power is the PPDA 111E with knobs: it has no core probe, programmes or automatic cleaning.
- This oven does not take GN 2/1 trays: for those, choose the PPDT 207E (7 × GN 2/1) or PPDT 211E (11 × GN 2/1). For more GN 1/1 trays, the PPDT 120E takes 20 — ask us about these models. The smaller seven-tray model is the PPDT 107E (800 × 750 × 800 mm, 8.3 kW).
- The Level-Up LU DT 111E has the same capacity and power, plus a larger 7″ touch screen and dual lighting — an LED strip in the door and a light in the chamber.
- Water hardness must be 4–12 °fH (French degrees); for harder water the manufacturer advises fitting a softener upstream. Polyphosphate dosing systems must not be used, and if a water treatment system takes the water outside the required values (see Installation requirements), the warranty is void.
